'Tis the season to start warming up from the inside out. Par example, this is a delicious brothy stew I've concocted over the years that's especially satisfying just after the Holidays....when we're worn out and overstuffed from several course meals! First, brine the roast overnight (bought locally at an Organic Farm in Dexter, Maine), then put the whole thing into the crockpot with water, seasonings, herbs, and fresh veggies (carrots, celery, onions, potatoes, garlic). After a few hours in the crockpot, the broth is beyond description...and the meat just melts under a spoon or fork. All I can say is....
